Shiitake are perhaps one of the best known of the Japanese mushrooms. Dried shiitake should be stored in airtight containers and must be re-hydrated in warm water before use.
Shiitake mushrooms can be used in many ways - boiled and served in a broth, or deep fried with Tempura, or even barbecued.
Preparation
Soften Shiitake by gradually soaking them (stems down) in lukewarm water for about 30mins. After they are soft, cut stems and drain excess water before usage.
Also, you can use the remaining water as a stock for your cooking.
