Konnyaku is a traditional Japanese jelly-like health food made from the root of the Konnyaku plant (a member of the yam family)
It does not have fat; it is rich in dietary fibre and is low in calories
In Japan, konnyaku comes both in a 'black' and a 'white' form.
Sold as small rectangular slabs, it will keep for a while.
It is popular in soups, stews and, cut in large triangles, in oden and one-pot cookery.
It should be parboiled to remove excess lime and to make the texture chewier before including in a recipe.
Konnyaku has a uniquely chewy, gelatinous texture with no distinctive taste. Konnyaku absorbs the flavour and taste of the other ingredients they are cooked with. As it has next to no calories, they are ideal foods for those who want to watch their weight.
Starch from the same plant is refined to make the Japanese noodles known as shirataki, which are also available from us.
