Perhaps one of the best known of the Japanese mushrooms. These large, premium, dried shiitake should be stored in airtight containers and must be re-hydrated in warm water before use.
Preparation
1. Before use, wash with water
2. Put into a bowl with water just covering the mushrooms.
3. Leave in fridge until stalks become soft (about 4-6 hours)
4. Its best to remove end of stalk before use.
Also, you can use the remaining water as a stock for your cooking.
