In Japan, tuna flakes are sometimes called bonito and katsuobushi. Bonito refers to the slipjack tuna and katsuobushi is the name for the way these flakes are prepared.
Bonito flakes are used in many Japapanese recipes - sprinkle it on rice balls or use it to make a stock (Dashi) for miso soup.
