Soba noodles are made from buckwheat flour. Soba noodles are extremely healthy and delicious. Containing high-grade protein and vitamins B1 and B2, these thin, tan noodles may be eaten hot or chilled. Made from a combination of buckwheat and wheat flours.
Although fresh soba noodles are readily available in Japan, the dried and frozen noodles are more common overseas because they keep indefinitely.
Directions
Scatter noodles into plenty of boiling water (2 litre) and cook about 5-6 minutes on high heat, or until noodles reach desired tenderness. Strain noodles into a colander. For cold serving rinse 2-3 times under cold running water.
