Clearspring Hijiki grows wild along the rocky Pacific coast of the Boshu peninsula, in eastern Japan, an area famous for its mild, temperate climate and abundant sea vegetables. Hand picked at low tide in early spring, the whole Hijiki plants are immediately steamed for over nine hours, until perfectly tender. They are then carefully dried, selected and packaged.
Using Hijiki
Hijiki's fine black strings are naturally rich in flavour. To prepare, first soak in cool water for 10 minutes. (Note: it will triple in volume). Drain, rinse, then cook in water for 10 mins with your choice of seasonings. Add to stir fries, salads and vegetables.
